Ingredients

generous pinch saffron thread
1/4 teaspoon ground turmeric
1 cinnamon stick
1 fresh hot red chili pepper , cored seeded quartered
3 cups turkey stock
1 medium red onion , cut into wedges about 3/4 inch thick
2 medium carrots , peeled cut into sticks
2 medium parsnips , peeled cut into sticks
1 cup butternut squash , peeled diced
2 medium zucchini , cut into sticks
2 large tomatoes , peeled seeded diced
1 can chickpeas , rinsed drained
kosher salt , to taste
1 1/2 cups cooked turkey , diced
1/4 cup golden seedless raisins
1/2 cup lightly packed fresh cilantro leaves
2 tablespoons unsalted butter
1 1/4 cups couscous
sambal oelek ( optional ) or Tabasco sauce ( optional )

Instructions

1.In a small bowl, combine the saffron and turmeric with 1/4 cup hot water.
2.Heat a large heavy casserole dish over medium heat and add the cinnamon stick and chili.
3.Cook for a minute, shaking the pan, until they’re fragrant.
4.Add the onion, carrot, parsnips, and squash, and stir well.
5.Pour in the stock and saffron water, and bring the mixture to a boil.
6.Lower the heat and simmer gently for 20 minutes.
7.Add the zucchini, tomatoes, and chickpeas.
8.Season the mixture with salt and add the turkey.
9.Sprinkle the raisins on top and cook for another 5-7 minutes or until the vegetables are tender and the sauce has thickened.
10.Stir in half the cilantro and remove from heat.
11.In a separate pot, melt the butter and sauté the couscous over medium heat for about 2 minutes or until it’s coated in the butter.
12.Add 1 1/4 cups of boiling water, cover, and let it sit for 5-7 minutes.
13.Serve the tagine hot on a bed of couscous with remaining cilantro and sambal oelek or Tabasco sauce, if desired.
