Ingredients

12 egg roll wraps , roughly 7x7 inches or
20 -24 spring roll wrappers , roughly 3x9 inches
1 canned tuna in water , good quality ( or tuna in a pouch )
2 small potatoes , peeled & diced ( or 1 can of diced potatoes )
1/4 medium onion , diced
1/3 cup black olives , pitted & chopped
1 tablespoon fresh parsley , finely chopped
1 tablespoon fresh cilantro , finely chopped
1 tablespoon harissa
2 teaspoons olive oil
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon black pepper
1 egg yolk , beaten with
1 teaspoon water
canola oil or peanut oil

Instructions

1.Preheat the oven to 375 degrees Fahrenheit.
2.Heat olive oil in a large skillet and cook diced potatoes until they are fork-tender.
3.Add onion to the skillet and sauté until it turns translucent.
4.Drain the tuna and break it up into small pieces. Add it along with harissa, black olives, parsley, cilantro, salt, pepper, cumin, and paprika. Stir well.
5.Cook for another 2 minutes on low heat, until everything is heated through.
6.Take a single wrap at a time and place it on a flat surface. Fill 1 tablespoon of the tuna mixture in the center of the wrap.
7.Follow the instructions on the package to seal the wrap with the egg yolk mixture.
8.Repeat until all of the mixture is used.
9.Heat the peanut/canola oil in a deep skillet/fryer and cook the briouats until they turn golden brown.
10.Transfer to a baking sheet and place them in the oven for 3 minutes.
11.Place on a plate and serve hot with the sauce of your choice.
