Ingredients

2 eggplants ( approximately 800g total )
1 tablespoon salt
2 red capsicums
1 teaspoon cumin seed
3 tablespoons olive oil
2 garlic cloves , finely chopped
1 teaspoon salt
1/2 teaspoon red pepper flakes
1 cup tomato sauce or 1 cup chopped diced tomato
juice 1 lemon
3 tablespoons chopped flatleaf parsley
Moroccan-style eggplant is a tasty vegetarian dish that showcases the rich flavours and bright colours of Mediterranean cuisine. The recipe combines succulent roasted eggplant with garlic, capsicum, and cumin, giving it a distinctively Moroccan flavour. Instructions

1.Preheat your oven to 200 C (400 F).
2.Cut the eggplants in half lengthways and score them on the flesh side.
3.Rub them with salt and leave them on a baking sheet for 15 minutes to draw out any bitterness.
4.Rinse the eggplants under cold water and pat them dry with paper towels.
5.In a frying pan, dry-roast the cumin seeds over medium heat for 2-3 minutes until fragrant.
6.Add the olive oil to the same pan and fry the chopped garlic, salt, and red pepper flakes for 1-2 minutes.
7.Add the red capsicums and fry for 2-3 minutes.
8.Add the tomato sauce and lemon juice to the pan and mix well.
9.Place the eggplant halves on the baking sheet and spoon the capsicum mixture over the top.
10.Roast the eggplants in the preheated oven for 30-35 minutes or until they are tender.
11.Garnish with chopped parsley before serving.
