1 small onion , finely chopped
1 tablespoon olive oil
1 teaspoon salt
3/4 teaspoon ground cumin
1/2 teaspoon ground ginger
1/2 teaspoon turmeric
1/2 teaspoon black pepper
1/4 teaspoon ground coriander
1 1/4 lbs chicken thighs , with skin and bones
3/4 cup chicken broth
1/2 cup water
1 cinnamon sticks
1/4 cup sliced almonds , toasted and coarsely chopped
2 large eggs , lightly beaten
1/2 cup butter , melted
8 phyllo pastry sheets , thawed if frozen
1 teaspoon ground cinnamon
2 teaspoons brown mustard seeds

Instructions

1.Preheat oven to 375 degrees Fahrenheit (190 degrees Celsius).
2.In a large saucepan, cook onion in olive oil over medium heat until softened.
3.Add salt, cumin, ginger, turmeric, black pepper, and coriander to the pan. Stir in the chicken and cook for 2-3 minutes.
4.Add chicken broth, water, and cinnamon sticks. Reduce heat to low, cover and simmer until chicken is tender, for about 20 to 25 minutes.
5.Remove chicken from the saucepan and let cool slightly. Remove and discard skin and bones, and shred chicken using a fork.
6.Mix the shredded chicken with toasted almonds and beaten eggs. Set aside.
7.Unroll phyllo pastry sheets and cover with a damp towel to prevent them from drying out.
8.Brush 1 sheet of phyllo with melted butter, sprinkle with cinnamon and mustard seeds. Repeat with the remaining sheets.
9.Cut each sheet into 3 equal pieces and place a spoonful of chicken mixture onto each piece.
10.Fold the phyllo into a small pillow shape around the filling and place the pillows on the baking sheet.
11.Bake in preheated oven for 12-15 minutes or until golden brown.
