Ingredients

1 tablespoon cumin
1 tablespoon turmeric
1 tablespoon paprika
1 tablespoon coriander
1 tablespoon garlic salt

2 teaspoons chicken bouillon ( or 2 cubes , crushed )
1/2 cup dried apricot , chopped ( optional )
1 tablespoon olive oil
2 lbs boneless skinless chicken breasts , cut into bite sized pieces
2 cups water

Instructions

1.In a small bowl, mix together cumin, turmeric, paprika, coriander, garlic salt, dried onion, red pepper flakes and chicken bouillon.
2.In a large bowl, combine the chicken breast pieces, spice mixture, and olive oil.
3.Mix until chicken is coated with spices.
4.In the bottom of a large glass jar, layer chopped apricots (if using) and then add the chicken.
5.Pour 2 cups of water just until the chicken is covered.
6.Seal the jar tightly and place it in a large pot.
7.Fill the pot with enough water to cover the jar by 1-2 inches.
8.Bring the water to a boil and then reduce heat to a simmer.
9.Let the chicken cook for 2 hours, or until the meat is tender.
