3/4 ounce butter
2 tablespoons caster sugar
1 banana , sliced into large chunks
4 ounces ready-made phyllo pastry
4 ounces butter , melted
2 teaspoons ground cinnamon
4 teaspoons caster sugar
4 1/2 ounces dried apricots
1 1/2 ounces whole almonds , roughly chopped
2 tablespoons honey
1 orange , zest only
2 teaspoons icing sugar
ice cream , to serve
This Moroccan-Style Banana, Apricot and Cinnamon Filo Parcel is inspired by North African cuisine and is the perfect dessert to enjoy after a hearty Moroccan meal. It combines the sweet and spicy flavors of cinnamon, orange, and honey with the nutty flavor of almonds and the sweet and juicy goodness of bananas and apricots. The recipe is relatively easy to put together, making it an excellent dessert option to impress dinner guests or enjoy with family and friends.

Instructions

1.Preheat the oven to 180°C.
2.Melt 3/4 ounce butter in a frying pan, add 2 tablespoons caster sugar and cook until the sugar has melted.
3.Add in the banana chunks and cook for about 2-3 minutes until the banana is caramelized.
4.Remove from the heat and let it cool down.
5.Take a sheet of phyllo pastry and brush it with melted butter and sprinkle 1 teaspoon of sugar and 1/2 teaspoon of ground cinnamon on top.
6.Repeat with another 3 layers of the phyllo pastry.
7.Place the cooked caramelized banana in the middle of the pastry.
8.Top with dried apricots and roughly chopped whole almonds.
9.Drizzle honey over all of the ingredients and sprinkle the orange zest on top.
10.Bring the pastry together into a parcel shape and place it on a baking dish.
11.Bake for 15-20 minutes or until golden brown.
12.Once it is cooked, sprinkle icing sugar on top and serve with ice cream.
