Ingredients

4 lamb shanks , frenched
1 1/2 tablespoons flour
80 ml olive oil
2 onions , chopped
3 garlic cloves , crushed
2 teaspoons ground cumin
2 teaspoons ground coriander
1 teaspoon ground ginger
1 1/2 teaspoons paprika
2 teaspoons harissa or 2 teaspoons minced red chilies
2 tablespoons sugar
6 cups hot beef stock
3 slices lemon zest
400 g chopped tomatoes
1 pinch saffron thread
250 g pitted prunes
1/4 cup coriander leaves , roughly chopped

Instructions

1.Preheat oven to 180°C.
2.Dust lamb shanks with flour and season with salt and pepper.
3.Heat oil in a large casserole dish and cook lamb shanks until well browned on all sides. Remove from dish and set aside.
4.Add onions, garlic, cumin, coriander, ginger, paprika and harissa to the dish and cook until onions are soft.
5.Add sugar and beef stock and bring to a boil.
6.Add lemon zest, chopped tomatoes, saffron and prunes.
7.Return lamb shanks to the dish and bring to a simmer.
8.Cover with a tightly fitting lid and bake in the preheated oven for 2 to 3 hours or until lamb is tender. Remove from oven and sprinkle with chopped coriander leaves before serving.
