Ingredients

2 medium bell peppers
1 teaspoon cumin
1 teaspoon coriander
3/4 teaspoon salt

1 lemon ( Plus more lemon wedges for garnish )
1 teaspoon olive oil ( for couscous )
1 tablespoon olive oil ( for steak )
2/3 cup whole wheat couscous
1 lb skirt steak ( Or sirloin steak , 3/4 to 1-in thick & trimmed )
2 tablespoons green olives ( chopped )
Moroccan Skirt Steak W-Roasted Pepper Couscous is a meal that's loaded with delicious exotic spices and flavors that will transport your taste buds to North Africa. Seasoned with cumin, coriander, turmeric, and cinnamon, the steak is juicy and flavorful. Instructions

1.Preheat the oven to 375°F.
2.Cut the bell peppers in half, remove the seeds and slice into strips.
3.Toss the peppers with 1 tablespoon olive oil, 1/4 teaspoon of the cumin, 1/4 teaspoon of the coriander, 1/4 teaspoon of the salt, and 1/4 teaspoon of the black pepper in a roasting pan.
4.Roast the peppers, stirring occasionally, until tender and slightly charred, about 30 minutes.
5.Meanwhile, combine the remaining cumin, coriander, salt, turmeric, cinnamon, and black pepper in a small dish.
6.Squeeze the lemon juice over the steak and rub with the spice mixture.
7.Heat the remaining 1 tablespoon olive oil in a large skillet over high heat.
8.Add the steak and cook until the desired doneness, about 3 to 4 minutes per side for medium-rare.
9.Remove the steak from the pan and let rest for 5 minutes before slicing thinly against the grain.
10.While the steak cooks, prepare the couscous according to package directions.
11.Fluff the couscous with a fork, then stir in the roasted peppers and chopped olives.
12.Serve the steak alongside the couscous with lemon wedges for garnish.
