1 onion , finely chopped
12 ounces shrimp , peeled and deveined

2 teaspoons salt , to taste

Instructions

1.Soak the rice vermicelli in hot water until they are soft and pliable.

3.Add the shrimp, sweet paprika, cilantro, cumin, lemon juice, Italian parsley and salt. Cook until the shrimp become pink and tender.
4.Take the lumpia skins and place the filling mixture into each one, rolling them up to create a log shape with both ends folded in to seal. If you prefer, you can use phyllo pastry sheet instead.
5.Fry the rolls until golden brown and crispy.
6.Serve with a dipping sauce of your choice.
