Ingredients

3 teaspoons cumin seeds

5 cm . cinnamon sticks ( or 1 tsp . ground cinnamon )
2 tablespoons light olive oil
1 onion , chopped
2 -3 garlic cloves , chopped
1 teaspoon ground sumac ( or fine zest of 1 lemon )
1 can tomatoes
2 -3 roasted red peppers , chopped
2 teaspoons brown sugar
2 teaspoons red wine vinegar
1/4 teaspoon chili flakes
salt & freshly ground black pepper
This Moroccan-inspired roast red pepper & tomato tagine sauce is a delicious and warming meal, perfect for a cold winter's evening. Instructions

1.Dry roast the cumin, coriander and cinnamon gently until fragrant and grind into a fine powder.
2.Heat the oil in a large saucepan on medium heat, and add onions, garlic and sumac, stirring occasionally, until softened.
3.Add the ground spices, canned tomatoes, roasted red peppers, brown sugar, red wine, and chili flakes. Mix well and season with salt and pepper.
4.Cover the saucepan and let the mixture simmer for 15-20 minutes, until thickened to a sauce consistency.
5.Check the seasoning and add more salt & pepper if needed. Serve with bread or couscous.
