Instructions

1.Preheat oven to 325°F.
2.In a bowl, mix together the crushed coriander seeds, lemon rind, olive oil, crushed cumin seed, crushed red pepper, and coarse salt until well combined. Rub the spice mixture over the rib roast or leg of lamb.
3.In a roasting pan, arrange the vegetables in the bottom. Place the rib roast or leg of lamb on top of the vegetables. Scatter the garlic silvers over the meat.
4.Roast the meat in the oven for approximately 2 to 2 1/2 hours, or until the internal temperature of the meat reaches 135°F for medium-rare or 150°F for medium. The vegetables should be tender and golden brown.
