Ingredients

1 teaspoon turmeric
1 teaspoon pepper
2 teaspoons ginger
1 teaspoon cumin
1 pinch saffron
1 teaspoon paprika
2 teaspoons salt
1 teaspoon coriander
2 lbs lamb or 2 lbs chicken
2 tablespoons olive oil
1 teaspoon minced garlic
1 onion , chopped
4 cups water
1 cup tomato sauce
1/2 red bell pepper , minced
2 carrots , quartered
1 zucchini , quartered
1 yellow squash , quartered
1 medium potato , peeled and quartered
1 can chickpeas
1 onion , minced
2 tablespoons olive oil
3/4 cup brown sugar
1 teaspoon cinnamon
2 cups dry couscous
3 cups water
4 teaspoons chicken base
1/4 cup butter
Moroccan Ramadan Couscous with Meat and Veggies, a classic Moroccan recipe, is typically enjoyed during the holy month of Ramadan but can be enjoyed all year round. The dish consists of a bed of fluffy couscous topped with plenty of vegetables and meat cooked to perfection in a gently spiced sauce. This dish is also a festival dish in Morocco and is often served on special occasions, weddings, parties, or any other happy events.

Instructions

1.In a small bowl, mix turmeric, pepper, ginger, cumin, saffron, paprika, salt, coriander together
2.Rub the seasoning mix onto the chicken/lamb pieces
3.Heat oil in a large pot over medium heat
4.Add minced garlic and chopped onions and cook till fragrant
5.Add the meat and brown for 5-7 minutes
6.Add 4 cups of water and tomato sauce and bring to boil
7.Add the red pepper, carrots, zucchini, yellow squash, potato and chickpeas and stir well
8.Reduce heat to low and simmer for 1-2 hours till meat is tender and veggies are cooked
9.In a separate pot, sauté minced onion in oil till brown
10.Add brown sugar, cinnamon with 1 cup of water and bring to boil
11.Reduce heat to low and let the mix simmer
12.In another pot, add the dry couscous, water, chicken base and butter and bring to boil
13.Reduce heat and let the couscous simmer for 10-15 minutes until cooked
14.Fluff the cooked couscous with a fork and serve along with the cooked meat and veggies
