250 g baby onions , peeled
1/2 bulb of garlic
400 g chopped tomatoes
2 tablespoons harissa
1 cinnamon stick
900 ml vegetable stock
2 large baking potatoes , peeled and cut in wedges
450 g pumpkin , in wedges
150 g baby corn
150 g sugar snap peas
350 g cherry tomatoes
2 tablespoons cornflour
3 tablespoons chopped of fresh mint
1/4 cup coriander leaves
This Moroccan Pumpkin and Harissa Stew is a hearty and flavorful vegetable stew that is perfect for cool autumn evenings. The stew is packed with nutrient-dense vegetables and flavored with a blend of North African spices, including the spicy harissa paste. Instructions

1.Heat the olive oil in a large, heavy-bottomed pot over medium heat.
2.Add the baby onions and garlic to the pot and sauté for 5 minutes, or until they begin to soften.
3.Stir in the chopped tomatoes, harissa, and cinnamon stick, and cook for another 2 minutes.
4.Add the vegetable stock to the pot, stirring well to combine with the tomato mixture. Bring the stew to a boil.
5.Reduce the heat to low, add the potatoes, pumpkin, baby corn, and sugar snap peas, stir well to combine, and let the stew simmer for 20-30 minutes, or until the vegetables are tender.
6.In a small bowl, whisk together the cornflour with 1/2 cup of water to make a paste. Stir the cornflour paste into the stew, breaking up any lumps that form.
7.Continue to simmer the stew for another 5-10 minutes, or until the sauce has thickened.
8.Remove the cinnamon stick from the stew, and stir in the chopped fresh mint and coriander leaves. Season with salt and pepper to taste.
9.Ladle the stew into bowls and garnish with additional fresh mint and coriander leaves, if desired.
