Ingredients

225 g xylitol artificial sweetener
6 large eggs
200 g ground almonds
50 g polenta
25 g self-raising flour
2 teaspoons baking powder
1 tablespoon sliced almonds
2 cups Greek yogurt or 2 cups cream , to serve
The Moroccan Orange & Cardamom Cake is a delicious dessert that has a unique flavor and texture. Using xylitol instead of sugar significantly reduces the calorie content without sacrificing taste. The combination of ground almonds, polenta, and flour gives the cake a moist and dense texture, while the cardamom and orange zest add flavor that is both fragrant and sweet. Instructions

1.Preheat the oven to 180C (160C fan). Grease a 23cm baking tin and line with baking paper.
2.Beat the xylitol and eggs in a bowl until light and fluffy.
3.Mix the ground almonds, polenta, flour and baking powder together in a separate bowl, then add to the egg mixture.
4.Add the zest of two oranges and sprinkle in the cardamom. Mix everything together well.
5.Pour the mixture into the prepared tin and sprinkle with the sliced almonds. Bake for 35 minutes or until the cake is golden brown and a skewer comes out clean when inserted into the center.
6.Allow to cool before serving, topped with Greek yogurt or cream.
