2 ocean trout fillets
2 tablespoons ras el hanout spice mix

1 red onion , sliced
1/4 cup dried cranberries
2 lebanese cucumbers
1 -2 avocado
1 bunch rocket or 1 bunch spinach
2 tablespoons rice bran oil
2 tablespoons rice vinegar
2 teaspoons rose water
The Moroccan Ocean Trout Salad is a refreshing and healthy dish that combines the flavors of the ocean with the exotic spices of Moroccan cuisine. The ocean trout fillets are coated in a spicy ras el hanout mix that pairs perfectly with the sweetness of the dried cranberries and the tanginess of the preserved lemon. Instructions

1.Preheat oven to 200°C/390°F and line a baking tray with baking paper.
2.Brush each trout fillet with 1 tablespoon of the rice bran oil, then sprinkle a tablespoon of the ras el hanout spice mix onto each fillet, spreading evenly.
3.Place the fillets on the baking tray and bake for 10-12 minutes, or until the fish is cooked through.
4.While the fish is baking, toast the pine nuts in a small frying pan over low heat, stirring until golden brown and fragrant.
5.In a large mixing bowl, add sliced red onion, dried cranberries, chopped preserved lemon, sliced cucumbers, and avocado cubes.
6.Once the fish is cooked, allow it to cool for a few minutes before breaking it into chunks and adding it to the bowl with the vegetables.
7.Add the rocket/spinach to the bowl and toss everything together gently.
8.In a small bowl, whisk together the rice vinegar, remaining tablespoon of rice bran oil, and rose water.
9.Drizzle the salad with the dressing and sprinkle with the toasted pine nuts before serving.
