750 g beef , cut into strips
1 brown onion , sliced
2 teaspoons ground cumin , ground
1 teaspoon lemon rind , grated
400 g tomatoes , from can
2 tablespoons slivered almonds , toasted
2 teaspoons of fresh mint , fresh , shredded

Instructions

1.Heat the oil in a large wok or frying pan on high heat.
2.Cook the beef for 3 minutes until browned and then remove it from the wok or frying pan.
3.Cook the onion for 2 minutes until it is translucent.
4.Add the cumin and lemon rind and cook for 1 minute.
5.Add the canned tomatoes and bring to a boil. Reduce the heat and simmer for 5 minutes.
6.Add the beef back into the wok or frying pan and stir in the slivered almonds and mint leaves. Cook for 2 minutes more.
7.Serve with rice.
