6 -8 medium tomatoes , cored and roughly chopped

400 g ground beef

Moroccan cuisine is well-known for its flavorful dishes, and this meatball recipe is no exception. These meatballs are seasoned with traditional Moroccan spices such as cumin and paprika, which gives them a distinct flavor. They’re also packed with healthy herbs like parsley that’s used in both the meatballs and the sauce. A tagine is typically used to make such dishes, but you can easily substitute it with a non-stick skillet.

Instructions

1.In a food processor, pulse the chopped tomatoes, paprika, cumin, cayenne pepper, parsley, garlic, and salt and black pepper until smooth.
2.Heat the vegetable oil in a tagine or large non-stick skillet until shimmering.
3.In a mixing bowl, mix the ground beef, paprika, cumin, cayenne pepper, parsley, garlic, salt, and pepper. Add a splash of water if the mixture appears too dry, and mix well.
4.Form the meat mixture into approximately 1.5-inch balls and place them in the hot oil.
5.Fry the meatballs until browned on all sides and cooked through, for 8-10 minutes.
6.Pour the tomato sauce over the meatballs in the skillet, reduce the heat, and simmer for 10 minutes, or until the sauce is thickened to your liking.
