1 package dry lentils
1 cup crushed tomatoes
2 quarts vegetable broth
1 package spinach
1 large zucchini , cut into small pieces
1 pinch salt to taste

Instructions

1.Rinse the lentils and drain. Chop the carrots, onion, and spinach leaves and cut the zucchini into small pieces.
2.In a large pot, heat olive oil over medium heat until hot. Add the chopped onion, stir and cook until it softens.
3.Add the chopped carrots, spinach and zucchini, stir, and cook for 5 minutes.
4.Add salt, black pepper, ground ginger, dried tarragon, and cumin to the pan and stir.
5.Add the rinsed lentils to the pot. Stir in crushed tomatoes and vegetable broth, bring to a boil, then reduce the heat to low and cover.
6.Let simmer for about 45 minutes, or until the lentils are tender.
7.Serve the soup hot and garnish with parsley. Enjoy!
