175 g red lentils , well rinsed
1 1/2 liters vegetable stock
4 tablespoons olive oil
25 g fresh coriander , roughly chopped
1/2 garlic clove , crushed with
1 pinch sea salt
1 teaspoon lemon juice
1/4 teaspoon hot chili oil
Moroccan Lentil Soup with Coriander Oil is a hearty and flavorful soup that is perfect for a cold or rainy day. Instructions

1.Heat 2 tablespoons of olive oil in a large saucepan over medium heat.

3.Add the ground coriander, cumin, and paprika and cook for an additional 2-3 minutes, stirring frequently.
4.Add the well-rinsed red lentils and vegetable stock to the saucepan and bring to a boil.
5.Reduce the heat to low and simmer the soup for 25-30 minutes, or until the lentils are soft.
6.While the soup is simmering, prepare the coriander oil. In a blender or food processor, blend together 4 tablespoons of olive oil, fresh coriander, crushed garlic clove with sea salt, lemon juice, and hot chili oil.
7.Once the soup is finished cooking, use an immersion blender or transfer to a blender to puree the soup until smooth.
8.Serve the soup hot with a drizzle of coriander oil on top.
