Ingredients

1 lb ground lamb
1/4 cup breadcrumbs
1 egg
2 tablespoons parsley , minced
2 tablespoons mint , minced
2 garlic cloves , minced
1/4 teaspoon salt
1/4 teaspoon pepper ( optional )
1 cup butternut squash , peeled , cut in half inch dice
1 red bell peppers or 1 yellow bell pepper , cut in half inch dice
1 can diced tomatoes
1/2 cup onion , small dice
2 cups chicken broth
1/2 cup raisins
1/2 teaspoon cinnamon
1/2 teaspoon cumin
1/2 teaspoon ginger
1/8 teaspoon cardamom ( optional )
1/8 teaspoon clove
4 tablespoons olive oil or 4 tablespoons any cooking oil
salt and pepper

Instructions

1.Grind together the ground lamb, breadcrumbs, egg, parsley, mint, garlic, salt, and pepper (if using) in a food processor until well combined.
2.Roll the mixture into 1-inch meatballs and set aside.
3.Heat 2 tablespoons of olive oil in a large pot over medium heat.
4.Brown the meatballs on all sides in the hot oil and set aside.
5.In the same pot, add the remaining 2 tablespoons of olive oil and sauté the onion, butternut squash, and bell pepper until lightly caramelized.
6.Add in the diced tomatoes with their juice, chicken broth, raisins, cinnamon, cumin, ginger, cardamom (if using), and clove.
7.Stir everything together and bring the stew to a boil.
8.Reduce the heat to low and add in the browned meatballs, making sure they are submerged in the liquid.
9.Cover the pot and let the stew simmer for 20-25 minutes, or until the meatballs are cooked through and the vegetables are tender.
10.Season with additional salt and pepper to taste.
