Ingredients

8 ounces ground beef or 8 ounces lamb
1/2 teaspoon salt ( to taste )
1/2 teaspoon cinnamon

1 large onion , finely chopped
3 tablespoons olive oil
1 teaspoon sugar
handful of green pitted olive ( coarsely chopped or sliced )
4 medium tomatoes , peeled , seeded and chopped
1 small handful of chopped cilantro
1/2 teaspoon salt

1/4 teaspoon black pepper ( OR 1/8 teaspoon cayenne pepper )
6 large eggs

Instructions

1.In a large bowl, mix together ground beef or lamb, salt, cinnamon, cumin, and black pepper. Knead the mixture for 5 minutes.
2.In a tagine or a skillet, heat olive oil over medium-high heat. Add onions and sugar and cook until the onions turn brown.
3.Add a handful of green olives, chopped tomatoes, cilantro, salt, cumin, black pepper, and cook for 5 minutes, stirring occasionally.
4.Make 6 holes in the tomato mixture, and break an egg into each. Season with salt, cumin, and cilantro.
5.Cover the tagine and cook until egg whites are set but yolks are still runny. Garnish with cilantro leaves and serve immediately with bread or couscous.
