2 carrots , thinly sliced
1 can chickpeas , rinsed and drained
1/4 cup flat leaf parsley , coarsely chopped
6 large fresh mint leaves , chopped
4 pork chops ( bone-in )
1/2 - 1 serrano chili , thinly sliced

Instructions

1.Begin by making the dressing. In a small bowl, whisk together the lemon juice, lemon zest, honey, harissa, cumin, 4 tablespoons of olive oil, and salt and pepper to taste.
2.In a large bowl, combine the sliced carrots, chickpeas, parsley, and mint. Toss with half of the dressing and set aside.
3.Season the pork chops with salt and pepper. Heat the remaining 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the pork chops and cook for 5-7 minutes per side, until golden brown and cooked through.
4.Toss the salad with the remaining dressing and serrano chili. Serve alongside the pork chops and enjoy!
