Ingredients

1 roasted red pepper , skin & seeds removed
3 garlic cloves
1 red chili
3 teaspoons coriander seeds , ground
3 teaspoons cumin seeds , ground
3/4 cup coriander
3/4 cup Italian parsley
10 mint leaves
pepper
1/2 a preserved lemon ( or you can use rind and flesh of 1 small lemon , but discard pith )
1/4 cup olive oil
1 kg red snapper fillet
1 big purple onion , finely sliced
oil ( for frying )
560 ml coconut cream
250 g frozen spinach , thawed

Instructions

1.Preheat the oven to 180°C. Place the roasted red pepper, garlic cloves, and red chili in a blender and blend until smooth.
2.In a separate bowl, mix the ground coriander, ground cumin, chopped coriander, Italian parsley, mint leaves, and a pinch of pepper.
3.Add the spice mixture to the blender with the roasted pepper mixture and blend until well combined. Add the preserved lemon or lemon rind and flesh and blend again. Set aside.
4.Heat the olive oil in a frying pan and fry the red snapper fillets for 1-2 minutes on each side until browned. Remove from the pan and set aside.
5.In the same pan, fry the onion until softened and lightly browned. Add the curry paste from the blender and fry for 1-2 minutes, stirring constantly. Add the coconut cream and thawed spinach, and mix well.
6.Place the snapper fillets in the pan with the sauce, cover with a lid, and cook over low heat for 10-12 minutes until the fillets are cooked through and tender. Serve hot with rice or naan bread.
