Ingredients

1 1/4 cups dried garbanzo beans
3 tablespoons oil
2 medium yellow onions , chopped
1 lb beef bones with marrow
3 lbs beef chuck roast
12 potatoes , peeled
1 sweet potato , peeled
1 teaspoon paprika
1 teaspoon cumin
1/2 teaspoon cinnamon
2 teaspoons salt
pepper , tot taste
5 eggs , kept in a shell
1 cup uncooked rice
1 egg , lightly beaten
1 teaspoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon salt

Dafina or Hamin is a traditional Jewish Moroccan stew that is slow-cooked overnight and enjoyed for lunch the next day. It is a hearty and filling dish made with beef, potatoes, eggs, and chickpeas. Moroccan Dafina is a version of this dish that does not include beans. The dish is seasoned with paprika, cumin, and cinnamon, which give it a warm and earthy flavor. In Moroccan Jewish culture, Dafina is a symbol of family and tradition, and it is often served during the Sabbath or other special occasions.

Instructions

1.Soak the garbanzo beans in water overnight.
2.Preheat oven to 250 degrees Fahrenheit.
3.Heat oil in a large pot over medium heat. Add onions and sauté until softened.
4.Add beef bones and fry until golden brown on all sides.
5.Add beef chuck roast and brown all sides.
6.Add potatoes and sweet potato. Stir to combine.
7.Add paprika, cumin, cinnamon, salt, and pepper. Stir to combine.
8.Pour in enough water to cover the ingredients by about 2 inches.
9.Bring to a boil, then reduce heat to low and simmer for 5 minutes.
10.Place the eggs in a bowl and cover with water. Add to the pot.
11.Cover the pot and transfer to the oven. Bake for 8 hours.
12.Cook the rice according to package instructions.
13.Remove the eggs from the pot, peel and set aside.
14.Mix together the beaten egg, cinnamon, nutmeg, salt, and pepper.
15.Add the cooked rice to the pot. Pour the egg mixture over the top. Stir to combine.
16.Place the eggs back into the pot. Cover and bake for an additional 30 minutes.
