Ingredients

1 cup dried garbanzo beans , soaked and peeled ( needing to peel them is not likely these days as you buy them cleaned )
4 cups couscous
4 lamb shanks
1/2 cup butter
4 tablespoons vegetable oil
salt ( to taste )
1 tablespoon black peppercorns
1 pinch saffron
1/2 teaspoon turmeric
1/2 teaspoon ginger
1/4 teaspoon nutmeg
2 cinnamon sticks
3 onions , quartered
6 fresh cilantro stems ( and 6 fresh parsley sprigs , tied together with the cilantro )
6 ripe tomatoes , peeled , seeded and quartered
1 lb carrot , cut into 2inch pieces
1 lb small turnip , quartered
1 quinces , peeled , cored and cubed
1/2 lb butternut squash , peeled and cubed
1 lb zucchini , quartered
1 fresh hot chili pepper
1 cup raisins

Instructions

1.Preheat oven to 350°F.
2.Saute the onions in butter and oil until soft. Add the lamb shanks and brown on all sides.
3.Add the garbanzo beans, spices, and enough water to cover everything. Cover and simmer for 45 minutes.
4.Stir in the cilantro and parsley bundle, tomatoes, carrots, turnips, and quinces. Cover and simmer for another 45 minutes.
5.Add the butternut squash and zucchini and simmer for an additional 30-40 minutes or until everything is tender.
6.Cook the couscous according to package directions and serve with the lamb shanks and vegetable stew.
