8 pita breads , cut into wedges for scooping
2 tablespoons extra virgin olive oil
2 lbs ground lamb
salt & freshly ground black pepper

1 large onion , chopped
1 green bell pepper , seeded and chopped
2 garlic cloves , finely chopped
1 lemon , juice and zest of
2 tablespoons Worcestershire sauce ( eyeball it )
1 can tomato sauce
2 tablespoons butter
1 1/2 cups chicken stock
1/3 cup golden raisin ( recipe says `` handful '' )
4 dried apricots , chopped
1 1/2 cups couscous
3 -4 tablespoons toasted pine nuts
1/4 cup fresh parsley leaves , chopped ( recipe says `` handful '' )
1/4 cup fresh mint leaves , chopped ( recipe says `` handful '' )
3 tablespoons chives , finely chopped

Instructions

1.Heat the oven to 375 degrees F. Arrange the pita wedges in a single layer on a large baking sheet. Drizzle with 1 tablespoon olive oil and season with salt and pepper to taste. Toss well to coat and then spread out the pita pieces to make sure they are not overlapping. Bake until golden brown and crisp, about 15 minutes.
2.In a large skillet, heat 1 tablespoon oil over medium-high heat. Add the lamb, salt, and pepper and cook until browned and cooked through, about 8 minutes. Drain the fat and transfer the lamb to a bowl. Leave approximately 2 tablespoons of fat in the skillet.
3.Add the chili powder, cumin, coriander, cinnamon, and paprika, bay leaf, chopped onion, green bell pepper, and garlic to the skillet. Stir in the lemon zest, Worcestershire sauce, tomato sauce, butter, chicken stock, golden raisins, chopped apricots, and 1/2 teaspoon salt. Simmer over low heat for 10 minutes.
4.While the lamb chili cooks, prepare the couscous. Bring 1 1/2 cups water to a boil in a medium saucepan. Add the couscous, 1 tablespoon olive oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Cover and turn off the heat. Let sit until the water is absorbed, about 5 minutes. Fluff the couscous with a fork and stir in the remaining tablespoon of oil, pine nuts, parsley and mint.
5.Serve the lamb chili with the couscous and pita chips for scooping.
