Ingredients

1 1/2 cups barley
1 1/2 cups chicken or 1 1/2 cups vegetable broth
1 1/2 cups water
1 teaspoon salt

1 can chickpeas , rinsed and strained ( garbanzo beans )
1 cup shelled pistachio nut
1 cup diced dried apricot
2 -3 chopped green onions or 2 -3 scallions
1 cup chopped parsley
zest and juice of a lemon
1 tablespoon ras el hanout spice mix
salt
ras el hanout spice mix
1 teaspoon black pepper
1 teaspoon cardamom
1/4 teaspoon cayenne
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/2 teaspoon turmeric

Instructions

1.In a pot, combine barley, broth, water, and salt.
2.Bring to a boil, reduce heat, and cover.
3.Simmer for 30-40 minutes or until barley is tender and liquid has been absorbed.
4.While barley is cooking, heat olive oil in a skillet.
5.Add chickpeas, pistachios, dried apricots, scallions, parsley, lemon zest and juice, and ras el hanout spice mix.
6.Cook for 5-7 minutes or until chickpeas are slightly browned and pistachios are toasted.
7.Combine cooked barley and chickpea mixture in a bowl.
8.Add salt and additional ras el hanout spice mix to taste. Serve chilled or at room temperature.
