Ingredients

2 small yellow squash , cut into 1/4 inch slices

4 boneless skinless chicken breast halves
1 teaspoon grated lemon , zest of

2 tablespoons chopped flat leaf parsley
2 heads bibb lettuce , torn

Instructions

1.Preheat grill (or grill pan) over medium-high heat.
2.In a small bowl, combine cumin, coriander, salt and pepper. Mix well.

4.Place the seasoned chicken breasts in a large bowl and rub them all over with the spice mixture.

7.Cut the chicken breasts into thin slices. In a separate small bowl, whisk together the remaining olive oil, lemon zest, lemon juice and parsley to make a dressing.
8.Divide the torn bibb lettuce among four plates.
9.Arrange the grilled squash and zucchini around the edges of each plate.
10.Top with sliced chicken.
11.Drizzle with lemon parsley dressing. Serve.
