Ingredients

1 large lemon , washed , sliced into thin rounds , and then quartered
1/4 cup extra-virgin olive oil , plus extra for lemons
1 1/2 teaspoons ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
2 pinches cayenne pepper
1/2 teaspoon orange zest , plus 1/4 cup orange juice
kosher salt & freshly ground black pepper
8 medium carrots , peeled and grated ( about 4 cups )
1/4 cup parsley , fresh chopped
2 tablespoons pine nuts , toasted

Instructions

1.Preheat oven to 375°F.
2.Toss lemon slices with 1 tablespoon of olive oil and arrange on a baking sheet in a single layer.
3.Combine cumin, cinnamon, ginger, and cayenne pepper in a small bowl.
4.In another large mixing bowl, toss grated carrots with the remaining olive oil and sprinkle with the spice mixture. Mix well and transfer to a baking sheet lined with parchment paper.
5.Roast both pans of lemons and carrots in the oven for 20-30 minutes or until the edges are golden brown.
6.Once cooked, remove from the oven and let cool for 5 minutes.
7.In a large serving bowl, whisk together orange zest and juice, salt, and pepper. Add the roasted carrots and pine nuts and toss well.
8.Serve immediately with the roasted lemons on top.
