1 flat anchovy fillet , chopped
1 teaspoon finely grated fresh lemon zest
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon black pepper
1/4 cup olive oil
12 slices good-quality bread
6 ounces soft mild goat cheese , at room temperature

Instructions

1.Preheat the oven to 425°F.

4.Spread the carrots out on a large rimmed baking sheet in a single layer and roast them for about 25 minutes, until tender and slightly caramelized.
5.While the carrots are cooking, make the tapenade.
6.Pulse the olives, capers, parsley, anchovy, lemon zest, lemon juice, black pepper, and olive oil in a food processor until finely chopped.
7.To assemble the sandwiches, lay 6 slices of bread on a work surface and spread 2 teaspoons of goat cheese on each one.
8.Top with some roasted carrots and a spoonful of the tapenade. Cover with the remaining slices of bread.
