2 eggs

1/2 green bell pepper , thinly sliced
1 red bell pepper , thinly sliced

2 large carrots , shredded
8 tablespoons thousand island dressing

Instructions

1.Boil the eggs to your desired level of hardness and peel. Cut into quarters.
2.Julienne the iceberg lettuce and distribute onto a large serving platter making a base for the salad.
3.Slice the yellow, green, and red bell peppers thinly and arrange on top of the bed of lettuce.
4.Julienne the pickled beet and sprinkle over the bell peppers.
5.Shred the cucumber and place along the center of the salad.
6.Shred the carrots and sprinkle on top of the salad.
7.Squeeze the thousand island dressing onto the salad and distribute evenly.
8.Arrange the boiled egg quarters around the edge of the salad.
