Ingredients

12 small green moreton bay bugs , halved and cleaned
50 ml blood orange infused avocado oil ( If you ca n't get this oil replace with olive oil )
4 golden shallots , finely diced
1 clove garlic , finely diced
2 vine ripened tomatoes , skinned , seed and diced ( tomato pulp reserved )
2 oranges , juiced
1 tablespoon orange zest
2 tablespoons basil , chiffonnade
maldon sea salt
cracked black pepper
2 cups frissee lettuce ( inner leaves of endive )
1 cup mixed herbs , chervil , coriander and parsley
30 ml vinaigrette

Instructions

1.Heat the avocado oil in a large pan over medium-high heat.
2.Add the shallots and garlic, cook until softened.
3.Toss in the tomatoes and sauté for a minute.
4.Add the orange juice and zest, cook for 30 seconds.
5.Season with salt and pepper.
6.Place the bugs flesh side down in the pan and cook for 2 minutes.
7.Toss the mixed herbs in a bowl with the frisée and vinaigrette.
8.Divide the salad among plates.
9.Place the bugs on top of the salad.
10.Garnish with chiffonade basil.
