Ingredients

2 lbs large shrimp ( reserve shells )
2 onions , sliced
3 tomatoes , sliced
4 garlic cloves , chopped
4 tablespoons dende oil ( or olive oil if you ca n't find it )
coconut milk , 100ml
1/8 teaspoon paprika ( see note at the end )
cilantro and chives , chopped

Instructions

1.Clean the reserved shrimp shells and add to a pot with 3 cups of water, bring to a boil and let simmer for 10 minutes before straining away the shells and reserving the shrimp broth.
2.In another pot, sauté the onions and garlic with dende oil for 5 minutes under low heat before stirring in the sliced tomatoes and paprika. Let the tomatoes cook down for 5 minutes before adding the shrimp broth.
3.Bring the mixture to a boil and let simmer for 5 minutes before adding the large shrimp. Cook until the shrimp turns pink and is cooked through. Add coconut milk and the chopped cilantro and chives at the last minute before serving with rice and pirao, a Brazilian fish stew thickened with cassava flour.
4.To make the pirao, combine cassava flour with water and let it cook in a pot until it forms a thick stew. Serve hot with the Moqueca Com Pirao.
