Ingredients

4 -5 lbs moose roast
1 cup chopped celery
1 cup chopped onion
1 cup chopped carrot
2 tablespoons cooking oil
3 cups vinegar
2 cups water
1/2 cup chopped parsley
3 bay leaves
1 tablespoon thyme
1 tablespoon basil
1 tablespoon allspice berry
1 tablespoon crushed peppercorn
6 crushed garlic cloves
3 cups beef stock
1 cup reserved marinade

Instructions

14.Strain the juice and reserve it as leftover Moose Au Jus.
15.Serve the juicy, tender moose roast along with Moose Au Jus.
