Ingredients

1 onion
6 garlic cloves ( There 's no such thing as too much Garlic )
2 tablespoons olive oil
2 lbs ground moose
1/2 lb tomatoes ( diced )
2 tablespoons tomato paste
1 teaspoon sugar
1/2 cup red wine
1/4 teaspoon cinnamon
1 zucchini ( about 8 inches long )
2 large russet potatoes
1 medium eggplant
2 tablespoons olive oil
6 tablespoons butter
1/2 cup flour
4 cups skim milk ( low fat )
1/4 teaspoon nutmeg
6 tablespoons grated parmesan cheese
salt and pepper
2 eggs
Moose Moussaka is a hearty and flavorful dish that originated in the Balkans and has become popular around the world. This recipe uses ground moose which is a lean protein source, and is a healthier alternative to beef. Instructions

1.Heat olive oil in a large skillet over medium heat.
2.Add onion and garlic, stirring frequently until onion is translucent.
3.Add ground moose to the skillet and cook for 10-15 minutes, or until browned.
4.Add diced tomatoes, tomato paste, sugar, red wine, and cinnamon, stirring to combine.
5.Lower the heat and simmer for 30-40 minutes, stirring occasionally.
6.Slice zucchini, potatoes, and eggplant into thin rounds.
7.Preheat oven to 375°F.
8.In a saucepan, melt butter over low heat.
9.Add flour to the melted butter and whisk for 1-2 minutes.
10.Gradually add skim milk into the saucepan, whisking continuously until the mixture thickens.
11.Add nutmeg and 3 tablespoons of grated parmesan cheese into the sauce, mixing well.
12.Add salt and pepper to taste.
13.In another skillet, heat 2 tablespoons of olive oil over medium heat.
14.Add sliced zucchini, potatoes, and eggplant to the skillet, cooking until lightly browned on both sides.
15.Set aside.
16.In a bowl, beat 2 eggs.
17.Lightly grease a baking dish.
18.Layer the browned vegetables into the baking dish.
19.Pour the meat sauce over the vegetables.
20.Pour the sauce onto the meat sauce.
21.Sprinkle the remaining grated parmesan cheese on top of the sauce.
22.Pour the beaten eggs evenly across the top of the dish.
23.Bake in the preheated oven for 50-60 minutes, or until golden brown on top.

Moose meat is high in protein and low in fat.
