Ingredients

1 1/4 kg beef , suitable for stewing
1/3 cup flour
2 tablespoons olive oil
1 large brown onion , chopped
1 garlic clove , finely chopped
50 g pancetta or 50 g bacon , finely sliced
2 stalks celery , sliced
2 carrots , sliced
1 cup beef stock
1 cup water
1 tablespoon Worcestershire sauce
330 ml monteith 's black beer
1 teaspoon thyme leaves
2 bay leaves
1 tablespoon Italian parsley , finely chopped
4 sheets frozen puff pastry , thawed
1 egg , beaten with a few drops of milk
Monteith's Beef & Black Pies Recipe is a hearty and satisfying meal that is perfect for cold winter evenings. Instructions

1.Preheat oven to 200°C (180°C fan-forced).
2.Cut the beef into bite-sized cubes and coat in flour.
3.Heat olive oil in a large stew pot over medium-high heat. Add onion, garlic and pancetta. Cook until soft.
4.Add celery and carrots and cook for 5 minutes.
5.Add beef, beef stock and water to the pot. Stir well.
6.Add Worcestershire sauce, monteith's black beer, thyme leaves and bay leaves to the pot. Bring to boil.
7.Reduce heat and cook for 2 hours or until meat is tender. Stir occasionally.
8.Remove the bay leaves. Add the chopped parsley to the pot and stir well.
9.Spoon the beef filling into 4 ovenproof porcelain ramekins.
10.Cut the puff pastry into circles that fit the ramekins. Place the circles over pies.
11.Brush the top with beaten egg mixture.
12.Bake for approximately 30 minutes or until the pastry is golden brown and cooked through.
