Ingredients

125 g unsalted butter
1/2 cup caster sugar
1/4 cup milk
1 1/2 cups sifted self-raising flour
1/4 cup sifted custard powder
1/3 cup desiccated coconut
75 g unsalted butter

Instructions

1.Preheat your oven to 180°C and line a baking tray with non-stick baking paper.
2.In a bowl, cream together the butter and caster sugar until it’s light and fluffy.
3.Mix in the milk and combine it well.
4.Sift the self-raising flour and the custard powder into the same bowl.
5.Mix well with the desiccated coconut.
6.Roll heaped teaspoons of the mixture lightly into small balls.
7.Place them two inches apart on the baking tray and flatten slightly.
8.Bake for 15 minutes, or until they are lightly browned on the edges.
9.Allow them to cool on the tray for five minutes before transferring them to a wire rack.
10.To make the icing, cream the butter and icing sugar together until it is fluffy.
11.Add in the milk and combine until smooth and creamy.
12.Spread a little amount of the strawberry jam on the bottom of one biscuit, then place another on top to form a cream-filled sandwich. Then spread the icing onto the top of the biscuit.
13.Repeat until all of the biscuits are used up. Serve immediately or store in an airtight container at room temperature.
