Ingredients

185 g butter
1/2 cup brown sugar , firmly packed
1 egg
1 teaspoon vanilla
1 1/4 cups self-raising flour
3/4 cup plain flour
1/2 cup coconut
raspberry jam or other jam
60 g butter
3/4 cup icing sugar
1/2 teaspoon vanilla
2 teaspoons milk
Monte Carlos are classic sandwich cookies that are a beloved treat in Australia and beyond. With a jam-filled centre sandwiched between two soft, coconut and flour-based biscuits, they offer a sweet and satisfying snack for any occasion. The recipe we are sharing today is a classic take on these biscuits, with a home-made raspberry jam filling and a simple vanilla buttercream icing to finish them off. Instructions

1.Preheat your oven to 180C and line two oven trays with baking paper.
2.Beat the butter and brown sugar in a bowl until the mixture is light and fluffy.
3.Add the egg and vanilla and beat well.
4.Stir in the flours and coconut to form a soft dough.
5.Roll dough into small balls and place on the lined trays. Press down with a fork to create an indentation in the centre of each cookie.
6.Bake cookies for 12-15 minutes until cooked through. Allow to cool for 5 minutes on the trays before transferring to a wire rack.
7.Allow the cookies to cool completely. Spread jam in the centre of half of the cookies.
8.In a bowl, beat the butter, icing sugar, vanilla and milk to combine. Spread a little icing on the remaining cookies and sandwich together with the jam-filled cookies.
