Instructions

.Preheat the oven to 375°F.
.In a large mixing bowl, combine the flour, cold butter, salt, and cracked black pepper. Use your hands or a pastry cutter to blend the mixture until it resembles coarse sand.
.Add the egg yolk and buttermilk to the mixture and knead until the dough comes together into a ball.
.Roll the dough out into a large circle and transfer it to a 10-inch tart pan. Press the dough into the edges of the pan and trim the excess.
.To make the filling, melt the butter in a large skillet over medium heat. Add the sliced shallots and chopped thyme and sauté until the shallots are soft and translucent.
.In a separate bowl, whisk together the cream, egg yolks, cracked black pepper, nutmeg, and salt. Pour the mixture over the cooked shallots and stir gently to combine.
.Sprinkle the grated Mont St. Benoit cheese evenly over the tart. Pour the shallot and cream mixture over the cheese.
.Bake the tart in the preheated oven for 30-40 minutes, or until the filling is set and the crust is golden brown.
.While the tart is baking, make the cranberry-red wine sauce. In a small saucepan, combine the cranberries, red wine, grape juice, cinnamon stick, cloves, corn syrup, bay leaf, orange zest, and cayenne pepper. Bring the mixture to a boil, then reduce the heat and let it simmer until the cranberries have popped and the sauce has thickened.
.Serve the tart warm or at room temperature, garnished with fresh thyme sprigs and drizzled with the cranberry-red wine sauce.
