Ingredients

500 g ground lamb
1 teaspoon grated fresh ginger
2 garlic cloves , crushed
1 small onion , chopped
50 g stale breadcrumbs
2 teaspoons dry sherry
2 teaspoons soy sauce
1 tablespoon chopped parsley
1 egg
2 tablespoons vegetable oil ( I use olive )
1 large red pepper , sliced ( capsicum )
4 green shallots , sliced
1 lamb stock cube ( I use vegita ) or 1 beef stock cube ( I use vegita )
1 teaspoon cornflour
250 ml water
2 teaspoons hoisin sauce
2 teaspoons sweet chili sauce
1 teaspoon peanut butter ( or can use tahini )
1/2 teaspoon five-spice powder
40 g unsalted dry roasted peanuts

Instructions

1.In a large bowl, mix together the ground lamb, ginger, garlic, onion, breadcrumbs, sherry, soy sauce, parsley, and egg until well combined.
2.Form the mixture into meatballs about 1 inch in diameter.
3.Heat the vegetable oil in a large skillet over medium-high heat.
4.Add the meatballs to the skillet and cook, turning occasionally, until browned on all sides.
5.Remove the meatballs from the skillet and set aside.
6.Add the red pepper and green shallots to the skillet and cook for a few minutes until slightly softened.
7.In a small bowl, dissolve the lamb stock cube or beef stock cube in 250 ml water.
8.Add the stock to the skillet and bring to a simmer.
9.In another small bowl, whisk together the cornflour, hoisin sauce, sweet chili sauce, peanut butter, and five-spice powder.
10.Pour the sauce mixture into the skillet and stir until thickened.
11.Add the meatballs back to the skillet and coat them with the sauce.
12.Sprinkle the dry roasted peanuts over the top and serve hot.
