225 g firm tofu
2 tablespoons peanut oil
1/2 medium yellow onion , sliced ( not diced )
2 large carrots , sliced
1 green onion
1 cup basmati rice
2 cups water

Instructions

1.In a mixing bowl, whisk together tamari, brown sugar, minced garlic, minced ginger, hoisin sauce, sesame oil, and water. Set aside.
2.Drain the tofu and slice it into small bite-sized pieces. Place the pieces onto a paper towel and wrap it, pressing down gently to remove excess water. Unwrap the tofu and transfer it back to the bowl with the marinade. Stir until the tofu is coated.
3.Heat peanut oil in a wok or skillet over medium-high heat. Add sliced onion and sliced carrot into the wok or skillet and saute for 2-3 minutes or until tender-crisp. Add in the tofu with the marinade and stir-fry for 3-4 minutes or until the sauce has thickened and the tofu is heated through.
4.Garnish with sliced green onion and serve hot with basmati rice. Enjoy!
