Ingredients

500 500 g pork ( or a combination ) or 500 g chicken meat , sliced and flattened ( or a combination )
1 leek ( roughly chopped )
1 Spanish onion ( roughly chopped )
2 shallots ( roughly chopped )
1 cup water
2 tablespoons hoisin sauce
2 tablespoons ground bean sauce
1 tablespoon chili bean sauce
1 tablespoon tomato paste
2 tablespoons dark soy sauce
4 tablespoons white sugar
1 1/2 tablespoons chicken bouillon powder
3 tablespoons corn oil
1 tablespoon chili oil
1 tablespoon minced garlic
2 tablespoons clear chinese rice wine
1 tablespoon potato starch ( set aside until required )
1/2 cup water
2 teaspoons white sugar

Instructions

1.In a bowl, combine the sliced meat, hoisin sauce, ground bean sauce, chili bean sauce, tomato paste, dark soy sauce, and white sugar.
2.In a separate bowl, dissolve 1 1/2 tablespoons of chicken bouillon powder in 1 cup of water.
3.In a wok or large pan, heat up 3 tablespoons of corn oil and 1 tablespoon of chili oil over high heat.
4.Add the minced garlic, chopped leek, Spanish onion, and shallots and stir-fry for 2 minutes.
5.Add the marinated meat and stir-fry for another 2-3 minutes or until the meat is cooked through.
6.Pour in the dissolved chicken bouillon and stir fry for 1-2 minutes or until the sauce thickens.
7.In a small bowl, dissolve 1 tablespoon of potato starch in 1/2 cup of water and add to the pan.
8.Stir-fry for another 1-2 minutes until the sauce is thick and shiny. Drizzle 1 tablespoon of corn oil over the top and serve hot with rice.
