Ingredients

1 cup rice
1 small onion
2 stalks celery , leaves included
1 medium tomatoes
1 package vegetarian ground beef , if using ( approx 375g )
1 medium cabbage or 1 medium sour cabbage
1 can diced tomatoes or ( 28 ounce ) can crushed tomatoes
salt , to taste
pepper , to taste
Mom's Vegetarian Cabbage Rolls are a vegetarian version of the traditional cabbage rolls recipe. This hearty, filling meal is perfect for any occasion. Made with a flavorful combination of cooked rice, onions, celery, tomatoes, and vegetarian beef, wrapped in tender sweet cabbage leaves, and topped with diced or crushed tomatoes. These cabbage rolls are easy to make and ideal for a light weeknight dinner or meal prep. You'll enjoy the comfort and deliciousness that come with every bite!

Instructions

1.Preheat oven to 375°F (190°C).
2.Cook rice according to package directions.
3.Meanwhile, chop onion and celery finely. Dice tomato.
4.In a pan, sauté onion and celery until softened and lightly browned.
5.Add the vegetarian ground beef and diced tomato. Mix well and cook for 5-6 minutes until heated through.
6.Remove from heat and add cooked rice. Mix well.
7.To prepare the cabbage leaves, remove the tough stem from the base of the cabbage leaves.
8.Place 2 tbsp of filling on each cabbage leaf and roll it up tightly. Repeat until all the filling is used.
9.Spread a layer of the diced or crushed tomatoes to cover the bottom of a 9x13 inch baking dish.
10.Place the cabbage rolls on top.
11.Pour the remaining diced or crushed tomatoes over the cabbage rolls.
12.Add salt and pepper to taste.
13.Cover with foil and bake for 1 hour.
14.Remove the foil and bake for another 20-30 minutes until the cabbage rolls are tender but not mushy.
