Ingredients

12 ounces pitted prunes
2 large potatoes , peeled and cut into chunks
3 carrots , peeled and sliced into rounds
1 1/2 teaspoons lemon juice
1/2 cup white sugar
2 tablespoons matzo meal ( optional )
Mom's Tzimus, also known as Tzimmes or Tsimmis, is a traditional Jewish dish that is usually served during special occasions like Rosh Hashanah or Passover. This dish is a sweet casserole made with prunes, carrots, and potatoes seasoned with some lemon juice, sugar, and sometimes, matzo meal. In Yiddish, the word 'Tzimmes' means 'a big fuss,' which refers to the long cooking time required to make this dish. However, once it's cooked, it is well worth the wait. The sweet and tangy flavors of the prunes and vegetables come together to create a delicious and hearty dish that can be served as a side or a main course.

Instructions

1.Preheat the oven to 350°F (175°C).
2.In a large pot, place the prunes, potatoes, and carrots together with enough liquid to cover.
3.Add the lemon juice and sugar to the pot, stir to combine.
4.Bring to a boil over high heat, then reduce the heat to low and cover the pot with a lid.
5.Cook until the vegetables are tender, about 40-50 minutes.
6.If you like, thicken the sauce with 2 tbsp of matzo meal during the last 10 minutes of cooking.
7.Give the mixture a stir and transfer it to an oven-proof dish.
8.Bake, uncovered, in the preheated oven for 30-40 minutes, or until the top is nicely browned.
