Mom's Tortilla Chip Casserole with Ground Beef is a classic Tex-Mex dish inspired by casseroles our moms used to make. It's warm, cheesy, and satisfying, perfect for a family dinner or potluck with friends. It's a one-dish meal that's easy to make and relatively affordable while being delicious. The tortilla chips add a spicy crunchy texture that contrast perfectly with the beef and cheese. Like most casseroles, it's not particularly fancy or gourmet, but it's comfort food at its best.

Instructions

1.Preheat the oven to 375°F (190°C).
2.Brown the ground beef and onion in a large skillet over medium-high heat, and add chili powder and salt. Cook until it has browned nicely and there's no pink meat left.
3.Add a can of tomato sauce, mix well, and allow the mixture to simmer for about 10 minutes.
4.Next, crush some of the tortilla chips and sprinkle them along the bottom of a 9x13 inch baking dish. Pour half the beef mixture on top of the chips.
5.Mix the sour cream, cottage cheese, and green chilies together in a bowl. Pour and spread half the mixture over the beef in the baking dish. Sprinkle some cheddar cheese over it.
6.Repeat by layering crushed tortilla chips, the beef mixture, the sour cream mixture, and cheddar cheese again.
7.Finally, crush some more tortilla chips and sprinkle them on top, finishing by adding more cheddar cheese.
8.Bake for about 20 minutes or until it's heated throughout and the cheese is melted and bubbly.
9.Serve hot.

HEALTH & BENEFITS

This casserole is high in protein due to the ground beef and cottage cheese. It also contains calcium and vitamins A and C, thanks to the cheese and tomato sauce.
