Ingredients

1 package frozen chopped spinach ( Thawed and squeezed dry of liquid )
1 package feta cheese
1/2 cup cottage cheese
1/4 cup parmesan cheese ( grated )
1/2 cup onion ( chopped )
1 garlic clove ( chopped )
1 egg
cayenne pepper
1/8 teaspoon black pepper ( ground )
1 teaspoon chicken bouillon ( optional )
1/2 cup butter ( melted )
12 phyllo pastry sheets
Mom's Spanakopita is a traditional Greek dish that has been passed down from generation to generation. Instructions

1.Preheat oven to 375°F.
2.In a large mixing bowl, combine spinach, feta cheese, cottage cheese, parmesan cheese, onion, garlic, egg, cayenne pepper, black pepper, and chicken bouillon (if desired).
3.Melt butter in a small saucepan.
4.Place phyllo sheets on a work surface and cover with a damp towel to prevent drying out.
5.Brush a 9x13 inch baking dish with melted butter, and layer 6 sheets of phyllo on top, brushing each sheet with melted butter before adding the next.
6.Add the spinach and cheese mixture on top of the phyllo.
7.Layer the remaining 6 sheets of phyllo on top, brushing each sheet with melted butter as before.
8.Brush the top layer of phyllo with melted butter and cut into squares or diamonds.
9.Bake for 50-60 minutes, until golden brown.
10.Allow to cool for a few minutes before serving.
