20 ripe beefsteak tomatoes
8 pears
8 peaches
6 large onions
2 red bell peppers
4 cups white sugar
1 quart vinegar
2 tablespoons pickling salt
2 tablespoons pickling spices ( tied up in a cheesecloth bag )

Instructions

1.Core and chop the tomatoes, pears, peaches, onions, and red bell peppers and put them into a large pot.
2.Add the sugar, vinegar, pickling salt, and pickling spices (tied in a cheesecloth bag) to the pot and mix well.
3.Bring the pot to a boil over medium-high heat, stirring occasionally to prevent burning.
4.Reduce heat to low and let the relish simmer for 2-3 hours until it thickens and the liquid reduces.
5.Remove the cheesecloth bag and allow the relish to cool before storing in airtight containers.
