Ingredients

1 medium salmon fillet
oil , for pan frying
2 cups water
1/4 teaspoon salt
3 tablespoons soy sauce
3 tablespoons vinegar
2 tablespoons sugar
1 tablespoon peppercorns or 1 teaspoon ground pepper
2 tablespoons cooking oil ( reserved from frying the fish )
4 garlic cloves , minced
1/4 cup sweet onion
1/4 cup ginger , cut into strips
1/2 cup carrot , julienne cut
1/2 cup red bell pepper , cut into strips
1/2 teaspoon cornstarch , mixed in water to a paste

Instructions

1.Heat oil in a pan, and fry the salmon fillet in a medium to high heat until crispy. Set aside.
2.In a saucepan, bring the water to a boil, then add salt, soy sauce, vinegar, sugar and peppercorns. Simmer for 5 minutes and set aside.
3.In a separate pan, heat the reserved oil from frying the fish and sauté the garlic, onion, and ginger until fragrant. Add the julienne cut carrot and red bell pepper, and stir fry for 1-2 minutes.
4.Pour the sauce into the pan with the vegetables, and cook until boiling. Add the cornstarch paste to thicken the sauce.
5.Arrange the crispy salmon on a plate, pour the sauce over the fish and garnish with the ginger strips.
6.Serve hot with steamed rice.
