Ingredients

1 1/4 kg potatoes , peeled
500 g camembert cheese
2 medium onions , peeled & roughly chopped
200 g smoked lardons or 200 g smoked streaky bacon , cubed
5 tablespoons creme fraiche or 5 tablespoons sour cream
400 ml dry white wine
salt
black pepper
1 teaspoon butter , for greasing
This French-style potato gratin is a decadent and satisfying dish that's perfect for a cosy night in. Instructions

1.Preheat your oven to 220ºC/425ºF/gas 7.
2.In a large pot of boiling salted water, cook the potatoes until tender.
3.Meanwhile, fry the lardons or cubed bacon in a pan until crispy.
4.Add the onions to the bacon and fry for a further 5 minutes.
5.Add the wine to the bacon and onions and let it reduce over medium heat.
6.Grease an ovenproof dish with butter.
7.Drain the potatoes and slice them thinly.
8.Layer a third of the potatoes in the bottom of the dish.
9.Spread half the bacon mixture over the potatoes.
10.Top with half the camembert cheese, sliced.
11.Repeat with another third of potatoes, the remaining bacon mixture, and the remaining cheese.
12.Finish with a layer of potatoes and dot the creme fraiche or sour cream over the top.
13.Season with salt and black pepper and bake for 10-15 minutes, until golden and bubbling.
