250 g unsalted butter , chopped , plus extra for greasing
1 cup cake flour , plus extra for dusting
300 g dark chocolate , chopped
4 eggs
4 egg yolks
1 1/2 cups superfine sugar
6 red plums , halved and stoned
double cream , to serve

Instructions

1.Preheat the oven to 200°C. Grease six 250ml stainless steel dariole moulds or ramekins with butter and dust with flour.

3.Beat the eggs, yolks, and sugar in a bowl with an electric mixer until thick and pale. Fold in the chocolate mixture until combined.
4.Divide the chocolate mixture among the prepared moulds. Place on a baking tray and bake for 12 minutes or until the puddings are cooked on the outside but still tender in the middle.
5.Meanwhile, place the plums skin-side down in a large non-stick frying pan over medium heat. Sprinkle with sugar and cook for 5 minutes or until caramelised. Remove from heat and set aside.
6.Turn out the puddings onto plates, serve with the sugared plums and a dollop of cream.
